Halibut are a mild, firm-textured fish and the cheeks, which are especially tender and delicious, are considered a delicacy. Halibut should smell fresh, like the ocean, and have a firm, white flesh.
The mild flavor of halibut, combined with its high nutritional value, makes this fish a favorite among fish lovers. It is the largest of the flatfish and one of the largest of the saltwater fish. It is a lean fish that contains very few bones and the skin is also edible.
